Now this is one free range organic amazingly fresh duck that has travelled in style to my kitchen. Polish ducks are BIG and certainly healthy. Polish duck have corn in their diet. Polish ducks do not smell. THIS Polish duck rocks!!! Thank you to Eva and Irek. @casparthewestie vouches it was amazingly tasty as his dinners over the last two days consisted of the duck gizzard, heart and liver. No nodes nor fatty lesions on the liver at all!! This beauty will turn into Cantonese Roast Duck shortly. It’s been resting quietly in my green house absorbing the cold night air and warmer cool airy space during the day in my greenhouse away from squirrels, foxes and creepy crawlies as one of my cellar fridges blew up after 50 odd years of service. It was left by the former owner the Head of Winchester College when we bought the house. Fresh Chanterelles and the odd dried aromatically pungent Porcini on a bed of parmiggiano polenta. Home cooked. Simple so so delicious. A drizzle of first run green peppery slightly bitter EVOO and cracked black pepper. Nothing else needed. Took forever to prepare though. Chanterelles are a big pain to clean. There’s always grass and leaves to painstakingly remove without adding too much extra water while washing. Polenta has to be watched throughout and whisked and stirred constantly. The most gorgeous experience ever!! Ecstasy!!! Thank you darling Henry for the experience. For those intrigued - this is a genuine lump of Amami Island kokuto. Yes yes yes and he made it while in Amami Oshima. Brown sugar as it’s known is made from slowly removing moisture from pure sugar cane juice. The main ingredient of Kokuto shochu made so famous in Kagoshima’s Amami Islands of Japan. Liquorice, molasses, barley, rounded sweetness concentrated and balanced so so beautifully. Heaven!
